This chapter reviews background material underpinning sensory science and sensory evaluation methodologies. Basic and historical psychophysical methods are reviewed as well as the anatomy, physiology, and function of the chemical senses. The chapter concludes with a discussion of multi-modal sensory interactions. There is no conception in man’s mind which hath not at first, totally or in parts, been begotten upon by the organs of sense. —Thomas Hobbes, Leviathan (1651)
